I quite like toasted cheese sandwiches but I find that at a certain point in the evening it gets too late to make them and I end up snacking on biscuits and cheese. I have no real idea why.

I think I make life hard for myself. I do not have a machine.
I do the toasted sandwiches under the grill, toasting each side lightly then putting on the cheese (there has to be enough to protect the bread from burning, and then adding spring onions, pickle or chutney and sometimes ham and/or tomato before putting the two sides together. I then continue to toast the sandwich on both sides.
I mainly use strong cheddar but also quite like brie, in which case I will probably not add pickle or ham. -

Well, I snacked on biscuits and cheese last night too. I did not intend to drink wine with it, but after my first blue cheese I could not resist a glass or two of red...

I am one of the world's great cheese lovers. Cheese on toast is food of the gods, if made with a nice strong cheddar. Cheese and biscuits can also be excellent.
